"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3 cups all-purpose flour
1/3 cup sugar, plus 2 Tbsp raw sugar for topping
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup cold butter (the colder the better)
1 cup buttermilk
1 2/3 cup chocolate chips, or cinnamon chips, or vanilla chips, etc.
2 Tbsp butter, melted for topping

Directions:
Directions:
Heat oven to 425º. Stir together flour, 1/3 cup sugar, baking powder, baking soda and salt in large bowl. Cut butter into 1/2 inch slices; using fingers or pastry blender, mix butter into flour mixture until coarse crumbs form. Add buttermilk; stir with fork just until ingredients are moistened and soft dough forms. Add chips of your choice. Gather dough into a ball, pressing gently to hold together. Turn onto slightly floured work surface; knead briefly, 10-12 times. Cut dough in half. Roll or pat one piece of dough at a time into 7-inch circle, 1/2" thick. Brush one circle with 1 Tablespoon melted butter; sprinkle with raw sugar. Cut circle into 6 triangles ( I use a pizza cutter). Place triangles on ungreased cookie sheet. Repeat procedure with remaining circle of dough.
Bake 10-12 minutes until tops are golden. Remove to a wire rack. Serve warm.

Personal Notes:
Yummy scones. I use any flavor of chips I have. Our daughters have added cut up dried apricots, craisins, or other dried fruits. I use regular sugar for the topping, since I'm not sure what raw sugar looks like.
