8 c. chopped broccoli
1 c. chopped onion
1/2 c. chicken or veg. broth
2 c. cooked rice
1 c. fat-free sour cream or yogurt
1 c. reduced-fat shredded cheddar
1/4 c. grated fresh parmesan, divided
1/4 c. Italian seasoned breadcrumbs
1 tsp. salt
1/4 tsp. black pepper
2 lg. eggs, lightly beaten
cooking spray

Preheat oven to 350º.

Combine first 3 ingredients in a deep skillet or Dutch oven. Bring to a boil. Cover, reduce heat and simmer 20 minutes or until tender. Drain. Combine broccoli mixture, rice, sour cream, cheddar cheese, 2 tbsp. parmesan cheese, breadcrumbs, salt, pepper and eggs in a bowl; stir gently. Spoon broccoli mixture into a 13" x 9" baking dish coated w/ cooking spray, sprinkle w/ 2 tbsp. parmesan cheese (I also put more breadcrumbs on top, too). Bake 30 minutes or until bubbly.

Preheat broiler. Broil 1 minute or until lightly browned.
