1 small can of kidney beans
1 c. elbow pasta
4 c. chicken stock
2 medium zucchini
1 small sweet onion
1/2 c. chopped green pepper
1 tsp. dried oregano
1/2 tsp. dried basil
1/4 tsp. crushed red pepper
2 cloves garlic, chopped
4 tbsp. olive oil
salt and black pepper to taste
freshly grated parmigianino-reggiano cheese

Directions:
Directions:
Saute the sweet onions in the olive oil in a large pot over medium heat until onions are translucent. Add green pepper and saute until soft. Add spices and garlic. Be careful not to burn your garlic or it will taste bitter. Cut the zucchini into thin slices and add to pot. Stir well and cook until soft. Add beans with their juices. Add the elbow pasta and stir well. Add to chicken stock and allow ingredients to come to a boil. Cook until pasta is soft. Salt and pepper to taste. Serve in large pasta bowls with freshly grated parmigianino-reggiano.
