2 cups flour
1/2 cup sugar
1 cup brown sugar
1 1/2 cups oil
1 small jar baby food carrots
1/4 cup orange juice
4 eggs
2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon vanilla
2 cups grated carrots

For cream cheese frosting

16 oz cream cheese, softened
1/4 pound butter, softened
6 cups confectioner's sugar

Cake mixture:

Preheat oven to 350; you will bake for 35-40 minutes. Grease & flour 2 8 inch cake pans; set aside. In mixer combine all ingredients except the carrots. Mix well for about 2 minutes; once mixture is well blended fold in grated carrots. Pour batter into prepared pans and bake. Let cool completely before frosting.


Cream Cheese frosting:

In a large mixing bowl add cream cheese & butter. Mix in mixer for about 3-4 minutes or until fluffy. Put mixer on low speed; add sugar frosting is until well blended and smooth.
