2 lbs. yellow or white summer squash, sliced
1/4 c butter or butter
1/2 c finely chopped onion
salt and pepper to taste
2 tsp celery seed
1 2-ounce jar chopped pimento
1 1/2 c shredded American cheese
2 eggs, beaten
1/2 c fine bread crumbs
1/2 c shredded American cheese

Directions:
Cook squash in covered saucepan in 1/2 inch boiling salted water over low temp, until tender. Drain and mash with potato masher. Melt butter in skillet over med temp. Add onion and cook until tender. Add onion to squash and add next 5 ingredients. Pour into greased shallow baking dish. Top with last 2 ingredients. Bake at 350º for 30 minutes.
