105 oz. chopped spinach (3 boxes drained and squeezed DRY)
7 lbs. cream cheese
2 1/2 c. Parmesan cheese
2 1/2 c. onion
1 1/2 tsp. pepper
10 1/2 garlic cloves
11 eggs
42 oz. mozzarella cheese

Mix all ingredients thoroughly.

Cook lasagna noodles and lay on flat pan. Spread one-half cup of the mixture across three-fourths of each noodle. Roll it up and put it in 9 X 13 pans with enough marinara sauce just to cover the bottom of the pan. Before baking, pour marinara over center of the roll-ups. After baking, sprinkle with fresh Parmesan cheese and fresh chopped parsley. Bake in a conventional oven at 350 degrees until center reaches 160 degrees. Serve with your favorite marinara or alfredo sauce. Makes 63 servings (plenty for now and for the freezer).
