Beat eggs well. Any amount of eggs works well, as follows:
For each egg used, add 2 SERVING SIZE tbsp. sugar, 2 SERVING SIZE tbsp. of melted Crisco/butter (half of each). Approximately 1 tbsp. pure anise (use a little less if using less than 6 eggs). Beat well. Add enough flour to make a soft, somewhat runny dough. Dough should be soft enough to spoon onto the pizzelle iron but not running off of the spoon. Cook until golden brown. Place on a cookie sheet lined with paper towels as they are removed from the iron. Allow to cool slightly before stacking.
