4 large chicken breasts, skinned and deboned
12 double saltine crackers
1/4 teaspoon pepper
1/4 teaspoon dry tarragon
1/2 teaspoon salt
1/2 cup butter
1/4 cup onion, chopped
1 can chicken stock or broth
1/2 cup dry white wine
1 can ( small) mushrooms or you can use fresh

Directions:

Preheat oven at 375 and bake for 35 minutes.
Place crackers in a zip- lock bag and crush until fine. Season with salt, pepper, tarragon.Moisten chicken and coat with crumbs. Let stand for 15 minutes. Heat butter in skillet, add chicken pieces and brown lightly on both sides, or for about 5-10 minutes. As it browns transfer chicken to baking dish and arrange in single layer. Add mushrooms and onions to skillet and sauté. Add chicken stock/ broth and wine to skillet with mushroom and onion. Sauté for a few minutes and then pour over chicken and bake.
