3 eggs
1 1/2 cups sugar
1 cup cooking oil
1 1/2 cups sieved cooked beets
2 ounces package of liquid chocolate
1 3/4 cups flour
1 1/2 tsp baking soda
3/4 tsp salt
1 tsp vanilla

Directions:
Directions:
Whip together the eggs and sugar until light, using electric mixer. Add oil, beets and the melted chocolate. Mix well. Add dry ingredients on low mixer speed. Add vanilla. Pour into a greased, floured tube pan and bake at 350º for 50 - 60 minutes. When cool frost with cream cheese frosting.

Canned beets may be used. Easiest way is to put them in a electric blender or food processor.
