1 pound dried red beans
8 oz. salt pork
3 Cups chopped onion
1 Cup chopped green onions
1 Cup chopped parsley
1 T. garlic salt
1/4 t. oregano
1 T. Worcestershire Sauce
1 t. pepper
1 1/2 t. hot pepper sauce
1 - 8 oz. tomato sauce
1 pound smoke sausage sliced
1 t. red pepper
6 Cups hot cooked rice

Directions:

Rinse and soak beans over night. Add salt pork, simmer covered 45 minutes. Add onions, parsley, garlic, oregano, Worcestershire sauce, peppers and tomato sauce and mix well. Simmer 1 hour. Brown sausage and add to beans. Cook 45 minutes. Serve hot over white rice.
