4 pieces Tandoori Naan
6-8 Tbsp sauce (Pesto!, or Trader Joe's Masala, Red Curry, or Green Curry simmer sauce)
1 block frozen spinach, thawed and drained (squeeze the water out with your hands) OR use fresh baby spinach.
4 to 8 Tbsp fresh Ricotta
1 c diced tomatoes

Preheat oven to 400 degrees F. Cut bread into quarters*. Spread the sauce on the top of the bread. Sprinkle on the spinach and small dabs of ricotta cheese. Bake for 5 minutes. Remove from oven and top with tomatoes.
*Leave Naan whole to make individual pizzas for lunch sized servings
