1 lb cooked chicken, cubed
1 cup cooked rice
1 can whole kernel corn, drained
1 red pepper
1 medium sized onion leek
1 medium carrot
2 oz cheese
1 cup sour cream
olive oil for sauteing

Directions:
Directions:
1. Cut red pepper and onion leak in cubes. Peel and grate carrot. Saute cut vegetables until red peppers become soft, stirring frequently.

2. Layer the bottom of casserole dish (9 x 9) with cooked rice.

3. Next put sauteed vegetables. Spread half a cup of sour cream on top of veggies.

5. Next layer is chicken. After that comes can of corn and the rest of sour cream.

6. Top all that goodness with cheese and put it in the oven at 350° F for 35 mins.

I found this recipe online years ago and it has been one of our family favorites ever since. This recipe is fairly easy to make. To make it even healthier you can use brown rice instead of white rice. Enjoy!
