Ingredients:  
Ingredients:  
1 large onion
1 bunch green onions
2 heads garlic
4 carrots
4 stalks celery
3 green peppers
3 red peppers
2.5 lbs. hamburger
4 eggs
3 tbsp sesame oil
freshly ground pepper
oyster sauce
1 tsp salt, or to tase
egg roll wrappers
canola oil, for deep frying

Directions:
Directions:
1. 'Finely' chop vegetables.
2. Cook hamburger until JUST done, not browned. Do not overcook!
3. Mix in veggies, with 2 eggs, sesame oil, oyster sauce, salt & pepper.
4. Strain vegetable mixture and spread out on cookie sheet or shallow pan to ensure mixture is cool before wrapping.
4. Beat remaining two eggs lightly in bowl.
5. Put a spoonful of mixture onto egg roll wrapper.
6. Roll up. Seal edge with beaten egg.

* Note: make sure not to use mixture from bottom...strain again, if necessary, so wrapped Lumpia doesn't get too moist!
