10 c. zucchini
4 c. onions
4 c. mixed peppers (red, green and orange)
1/2 c. hot peppers
2 tsp. mustard seeds
1 1/2 tsp. black pepper
1 1/2 tsp. salt
1 Tbsp. turmeric
2 1/2 c. vinegar
6 c. sugar

Peel, seed and grind the first four ingredients.
Put the remainder of the ingredients in a large pot and bring to a soft boil.
Add the vegetables and soft boil for an additional 30 minutes.
Wash pint jars and place in a 250º oven for the 30 min. cooking time.
Place new jar lids and rings in a pan of water on low temp on stove.
Put cooked relish in jars one at a time, wipe rim of jar and put lid and ring on tightly. The heat will cause the jars to seal.

My mother canned this relish for many years. It is the only relish our family uses on hot dogs, in potato and egg salad or for deviled eggs. I remember cutting all of the vegetables by hand prior to the invention of the food processor.

As each jar lid seals it makes a POP sound, to which Buddy Price would say, "Thank you, God" ilb HINT from ilb: prepare jars before making relish so they are ready for vegetables.
