Crappie, filleted (or fish of choice)
Flour and Corn meal mixture (1/2-1/2 ratio)
House seasoning
Peanut oil

Batter: mix flour, corn meal and seasoning together.

Directions:
Directions:
Using a fryer or skillet, add oil and heat. When oil is hot, coat fish in batter mix and add to oil. Cook until golden brown 2-3 mins.

Uncle Joe would fish for the crappie, fillet and freeze them in lb. packages (takes quite a few little crappie for a lb. bag). So good and what a treat!
Serve with Hush Puppies (recipe in bread section).
