2 lbs. bacon, cut into 1 inch pieces
1/2 cup bacon drippings
2 large onions, cut into 4 pieces and then into thin slivers.
1/2 cup packed brown sugar
1/4 cup garlic, minced
1 tsp. cayenne pepper
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 cup bourbon
1 cup brewed coffee
1/2 cup sherry vinegar
3/4 cup ketchup
1/2 cup maple syrup

Cook bacon in large saucepan on medium high heat until bacon starts to brown about 10 minutes. Drain grease retaining 1/4 cup of the drippings.
Add onions cook and stir until soft about 10 minutes. Stir in brown sugar and cook until onions are sticky about 5 minutes. Mix in garlic, cinnamon, nutmeg. Cool and stir until garlic soft about 5 minutes. Mix in bourbon, coffee, vinegar and maple syrup. Bring to boil, then reduce heat to low. Cool until thick but not completely dry. Stir occasionally about 35 minutes. Mix in ketchup and cook for 5 more minutes.
Remove from heat and let cool
Pulse in processor until slightly chunky and spreadable

This jam is great on burgers, hotdogs, sandwiches and bagel or right out of the jar. Store two weeks in refrigerator but will be gone before then
