1 large can or 4 c pumpkin
2 tsp cinnamon
2 tsp ginger
¼ tsp mace
2 c brown sugar
4 eggs
pinch salt
1 can evaporated milk
3 unbaked pie shells

Directions:
Directions:
Heat pumpkin thoroughly. Add cinnamon, ginger, and mace.
Stir together brown sugar and eggs. Beat well. Add a pinch of salt. Whip in evaporated milk. Add pumpkin mixture to the milk mixture and beat.
Pour into 3 unbaked pie shells. Bake at 375ºF for 30 minutes.
