2 T unsalted butter
1 med onion, diced
2 cloves garlic, minced
1 T fresh ginger, grated
1 t dried thyme
1 1/2 lb carrots, peeled & cut into 1/4" coins (slices)
1 lg Idaho potato, peeled & cut into 1" pieces
6 c chicken stock
1/4 -1/2 c heavy whipping cream
1 t sea salt
1 t ground pepper, freshly ground
2 T chopped fresh chives for garnish

* Heat large soup pot over med. flame until hot
* Add butter & let melt
* Add onion & saute until translucent ~ 3-5 minutes
* Add garlic, ginger & thyme
* Toss to coat with butter
* Add stock to pot
* Bring to a low simmer & cover
* Simmer until carrots & potatoes are knife tender, ~20-25 min.
* Remove from heat
* Puree soup in batches til smooth (blender, food processor or immersion blender)
* Add cream to desired consistency & heat thru
* Taste and adjust seasoning
* Ladle soup into serving bowls
* Garnish with chives
