14-1/2 C. sliced peeled baking Apples
2 Tbsp. Lemon Juice
1-1/2 C. Brown Sugar
1-1/2 C. Sugar
2/3 C. Corn Starch
1-1/4 tsp. ground Cinnamon
2/3 tsp Salt
1/4 tsp. ground Nutmeg
6 C. Water

In a large bowl, toss apples with lemon juice; set aside.
In a Dutch oven over medium heat, combine sugars, cornstarch, cinnamon, salt and nutmeg. Add water; bring to a boil. Boil for 2 minutes, stirring constantly. Add apples; return to a boil. Reduce heat; cover and simmer until apples are tender, about 6-8 minutes.
Cool for 30 minutes. Ladle one quart of mixture into 3-one quart freezer bags. Close freezer bag after removing as much excess air as you can. Flatten the bags and freeze them. Stack the frozen bags on top of each other in the freezer for storage.

To make your pie, remove a bag from the freezer and thaw. Heat contents on the stove or in the microwave for a few minutes. Pour into chilled pie crust and dot with butter before sealing with top crust or make a crumble mixture for top of pie.
