3 med carrots, grated
1 cup sugar
½ cup vegetable oil
2 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
½ tsp. mace
1 ½ cups flour
1 cup crushed pineapple, undrained

Directions:
Directions:
Grate carrots. Add remaining ingredients, except flour and pineapple.. Mix well and add flour. Mix again. Add undrained pineapple. MIx well and bake in greased and floured 10x13 pan. Bake @ 375 - 30 to 35 minutes. Ice with Cream Cheese Frosting. Store left over cake in the fridge.
