8 C. Fruit (Your choice of fruit. Strawberries=4 pints, Cherries=4 lbs. and Raspberries = 4 pints)
5 C. Sugar
2 Tbsp. Lemon Juice

5 Half Pint Jelly Jars which have been sterilized and have been kept hot.

In a Dutch oven, combine prepared fruit (washed, cherries pitted) with the sugar and lemon juice. Heat to boiling over high heat, stirring frequently. Continue to boil, stirring frequently, until translucent and jam is thick, about 25 minutes.
With a spoon, skim off the foam and discard.
Pour jelly immediately into sterilized, hot Jelly Jars, leaving a 1/2-inch headspace.
With a clean, wet cloth wipe the rims and seal as directed according to the instructions for the canning lids and bands you are using.
