5 lb. Plums, pitted and crushed (~ 4.5 quarts)
1 C. Water
6 C. Sugar
3 oz. Liquid Pectin (half of a 6 oz. bottle)

6 Half-Pint Jelly Jars which have been sterilized and have been kept hot.

Directions:
Heat crushed plums and water to boiling in a Dutch oven; reduce heat. Cover and simmer for 10 minutes. Strain, but do not press the pulp through the strainer. Strain the juice through 2 thicknesses of cheesecloth into a clean bowl.
In the Dutch oven, combine 3 C. of the plum juice with the sugar. Heat, stirring constantly, to a full rolling boil which cannot be stirred down. Add the liquid pectin and stir well. Heat again to a full rolling boil and boil for one minute; then remove from heat. With a spoon, quickly skim off the foam and discard.
Pour jelly immediately into sterilized, hot Jelly Jars, leaving a 1/2-inch headspace. With a clean, wet cloth wipe the rims and seal as directed according to the instructions for the canning lids and bands you are using.
