1/2 cup kosher salt
1/2 cup sugar
2 quarts of water

The amount of brine required will depend on the size of your birdie and your container.
(a new paint bucket from Uncle Steve is the ideal size for a turkey bird!)

Mix sugar, salt and water in desired container until dissolved. Submerge birdie, making sure he/she is covered with brining liquid. Place a plate or something on top of bird if needed to keep it under the liquid.

Refrigerate bucket overnight. (2 -8 hours could be sufficient for a chicken, overnight for turkey)

Drain birdie and rinse well under cool running water.Pat dry.

Cook as desired.
