1 medium onion, diced
1/4 cup oil
1/4 cup flour
2 cups heavy whipping cream
2-3 tablespoons curry powder mixed with water to make a paste
1-2 cups fresh shrimp

This recipe starts with the same basic 'sauce' recipe we use for gravy, cream chicken, and a host of others.

Over medium heat, use a medium sauce pan to cook the diced onion in the oil until tender. Add the flour and cook for about 2 minutes stirring constantly (this takes away the flour taste).

Add the heavy cream and stir to remove any lumps. At this point you may need to thin it out if it feels too thick. Mix the curry powder with water to make a loose paste. Add the paste a little at a time till the sauce is as hot to the taste as you would like it. As the sauce cooks, you may still need to thin it down somewhat.

Add the shrimp last. Chop some cilantro and add before serving.

Since we never measure for this, the proportions are a guideline . When you need to thin this down, you can use some chicken broth or half and half cream.
