1/2 c shortening
1/2 c sugar
2 eggs
2 Tbs milk
1 tsp vanilla
2 c flour
pineapple filling:
3 tsp cornstarch
3/4 c sugar
1 c crushed drained pinepple
1 t lemon juice or vanilla

Directions:
Directions:
Cream shortening. Add sugar and eggs. Add milk, vanilla, flour and baking powder, chill and roll. cut out in circles. Place on cookie sheet, in center of each put 1 tsp pineapple filling. cover with another cookie and press together.
Filling:
Mix cornstarch and sugar. Add 1 c crushed pineapple and lemon juice/vanilla. Boil to boiling point to consistency of jam Stir constantly. Cool before using.
