5 C thin sliced potatoes
SAUCE
3 Tbs Butter
1 C chopped onion
1 C grated Cheddar cheese
1 Tbs Chopped parsley
1.5 tsp Salt
1/8 tsp Paprika
1 C milk
1/4 C flour

Directions:
Directions:
Make Sauce
In a 2 Qt sauce pan melt butter and cook onions until tender. Stir in salt, flour pepper and paprika. Remove from heat and gradually stir in milk. Cook over medium heat, stirring constantly until thickened. Cook 2 more minutes without stirring. Remove from heat.
Build Casserole
Place 1/2 potatoes in buttered 1 Qt casserole disk. Pour 1/2 sauce over potatoes. Repeat. End with sauce.
Cover and bake at 350º for 1 hour.
Remove cover and back 20-30 minutes until tender.
