Grandma Peter's Russian Borscht Recipe

Ingredients:  
Ingredients:  
1 small chicken, or 1 beef soup bone
2 quarts water
1 med onion, thinly sliced
3 potatoes, cut into cubes
4 carrots, thinly sliced
2 cups cabbage, shredded
½ dried red chili pepper
½ tsp. parsley
½ tsp. dill seed
1 10 oz tomato soup

Directions:

Boil until tender
1 small chicken or 1 beef soup bone
2 quarts water


Add: onion, potatoes, carrots & cabbage

In a spice bag or cheesecloth, combine: red chili pepper, parsley & dill seed. Add to soup.

Boil until vegetables are done. Add 1 10-oz can of tomato soup.

Bring to a boil. Remove spice bag.

Add sour cream at serving time, if desired.

Add: 2 small shredded beets for Ukrainian Borscht! Grandma never put beets in her Borscht, but it does add a nice color & flavor, so I have adapted the recipe and add the beets. Barb
