8 - 12oz grated cheese - mild cheddar
1 chopped onion (small)
1 diced tomato (large)
1 can Ranch Style beans - rinsed
1 bottle Catalina Dressing - medium
(optional additions are olives, green peppers, avocados, chicken, hamburger, etc)

1/2 head of lettuce, chopped
1 small - medium sack of Fritos - crushed

Directions:
Directions:
Mix together first 5 ingredients, refrigerate overnight. Just prior to serving, add chopped lettuce, crushed Fritos and mix well. The salad will keep for days until the lettuce and Fritos are added.

When I bring this to the office, I begin with 2 pounds of grated cheese (or the large sack of grated cheese) and increase the other ingredients accordingly. Mixed cheeses may be used.
