3 medium red potatoes, peeled,cut in small cubes
1 c. water (from water you boiled potatoes in)
1/4 c. finely chopped onion
3 tbsp. butter
3 tbsp. flour
3 c. whole milk
1 c. shredded Cheddar cheese.(I use half sharp and half medium)
1 c. cubed cooked ham
salt & pepper to taste

Directions:
Boil potatoes till tender.Drain; reserve 1 c. water.
Melt butter in saucepan over medium heat. Saute onion in butter until tender. Add flour to mixture;stir till smooth, can add pepper; continue to cook and stir 1 minute. Gradually add potatoes, water and milk. Stir well; add cheese and ham. Bring to slow boil, then simmer over low heat, stirring frequently for about 20 minutes. (Can keep on simmer longer if needed)
