Sweet Potato Casserole

6-8 large sweet potatoes (5 lbs.)
1 egg, beaten
1 cup sugar
1 stick butter melted
2 Tablespoons flour
1/2 cup evaporated milk
1 1/2 tsp. vanilla
1 1/2 tsp. cinnamon

Topping:

1 1/2 sticks butter, melted
2 cups brown sugar
2 cups pecan pieces
2 cups coconut

Directions:
Directions:
Boil potatoes with skin for 1 hour. Let cool. Remove skin and mash until smooth. Add egg, sugar, butter, flour and evaporated milk. Mix all ingredients together. When blended, add vanilla and cinnamon. Mix to blend. Pour into 13 x 9-inch baking dish. Combine all topping ingredients in separate bowl. Spread on top of sweet potatoes. Bake 40 minutes at 350 degrees. Check occasionally to make sure coconut is not getting to brown. If it is, cover and continue baking (for full 40 minutes).
