12 eggs, beaten
1/2 cup flour
1 tsp. baking powder
1 tsp. salt
pepper to taste
1 pint cottage cheese
16 oz. shredded cheddar cheese
1 stick butter, melted
1/2 green pepper diced
1 onion diced
8 oz. sliced mushrooms
2 tomatoes very thinly sliced
dried parsley flakes

Grease a 9 x 13-inch Pyrex dish (I use Pam). Beat the eggs with a fork. Mix flour, baking powder, salt and pepper. Add to eggs. Add all other ingredients except tomatoes and parsley. Pour into Pyrex dish. Lay tomatoes on top and push down lightly into batter....so they still show. Sprinkle with parsley flakes. Bake @ 350º for 40-45 minutes. Remove from oven and let set for 15 minutes before cutting. I cut mine into brownie size squares. Serves 8-10.

This casserole is a huge hit with everyone.....delicious and beautiful. It might be hazardous for someone with high cholesterol!
