16 oz. (1/2 quart) hulled and washed Strawberries
1/4 cup Sugar
1 tbsp. Fresh squeezed lemon juice (about 1/2 of a lemon)

Directions:
Directions:
Chop up strawberries into very small pieces.
Transfer to a large frying pan and stir in sugar and lemon juice.
Cook over medium-high heat stirring frequently.
When jam bubbles completely over surface, set timer for 8 minutes and continue stirring.
Transfer jam into a mason jar, put lid on and let cool to room temperature. If seal goes down, you may keep it out of the frig until you start using it. Then refrigerate for up to 10 days.
