Ingredients: 1 small box of sliced mushrooms (the prewashed kind at grocery store is easiest) 3 T. of butter 2 T. olive oil (EVOO) 2 T. of seasoned salt (I use TEXJOY here in Texas, but Morton's Steak Seasoning works well) 3 cloves of minced garlic (or use a fine grater) 2 T. flour 1/2 c. Marsala Wine 1/4 c. Parmesan cheese grated (for best results, use good cheese, NOT Kraft Pizza Style flavor) Optional: 1 small onion diced fine (cook with mushrooms)

Directions:Over medium heat, melt butter with EVOO. When completely melted, add mushrooms (and onions, if you choose to) and stir to coat. Let saute for approximately 2 minutes, grate garlic into pan (or add minced garlic to pan), add seasoned salt, stir in flour and Marsala wine.....(should be a pretty caramel color). When consistency has reduced down to mainly just the mushrooms turn off heat. Sprinkle with cheese, cover with lid and let sit until other food items are ready to eat. |

Notes: If the mushrooms are really large they will take longer to cook, to reduce the time to fit dinner schedule, break the slices into small pieces. To make this into an entree, you can make in larger quantity and add cut-up chicken (grilled chicken breast, or rotisserie chicken). If you need it with more liquid, add chicken stock/broth, put the cheese on just before serving.
