2 tbsp. olive oil
1 stick butter
2 tsp. shallots
2 cloves garlic
3 tbsp. cognac
1/4 c. white wine
1/2 c. fresh basil
1/2 c. fresh.parsley
18 mushrooms, cleaned and finely diced
8 oz. crab cleaned
1 c. Parmesan cheese
1/4 c. bread crumbs

Directions:

Melt oil and butter in a frying pan over medium heat. Add garlic and shallots. Cook till softened, add basil and salt and pepper. Flambe with the cognac. After the flame dies out add the white wine and cook for 2 minutes. Add the crab and breadcrumbs, stir through the mixture and take off heat.

Brush mushrooms with melted butter, spoon shail mixture into each mushroom and place on a greased baking sheet. Sprinkle with Parmesan cheese. Bake in 350 degree oven until bubbly
