1 - 6 oz. pkg. Cream Cheese, Room Temperature
1 c. Grated Sharp Cheddar
1 c. Grated Monterey Jack
1/2 c. Mayonnaise
2 to 3 tbsp. Pimentos, Smashed
1 tsp. Grated Onion
1/2 tbsp. Garlic Powder or Granules
Cracked Black Pepper, to Taste
Pinch of Salt

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It tastes even better the day after it is made, so it's perfect for early party prep!
