Ingredients: Chocolate Jelly Roll
1/4 cup cornstarch 1/4 cup flour 1/4 cup cocoa powder 5 egg yolks 1 tsp strong coffee 1 tsp Grand Marnier 5 egg whites 1/3 cup sugar Apricot Jam ( for brushing on the cake)
Truffle Mousse Filling
1 1/4 cups whipping cream 1 1/2 cups chopped dark chocolate 4 tbsp unsalted butter at room temperature
Grand Marnier Syrup
1/4 cup water 1/4 cup sugar' 2 tbsp Grand Marnier
Chocolate Glaze
1 cup chopped dark chocolate 2 tbsp butter

Directions:Cake Preheat oven to 400. Line a jelly roll pan with parchment paper. Sift the first 3 ingredients together. Blend the egg yolks, liqueur and coffee. In a large mixing bowl beat the egg whites until foamy. Slowly add the sugar and beat until stiff. Fold 1/4 of the egg whites into the yolk mixture and then pour into the rest of the egg whites. Fold in the dry ingredients and spread in the pan. Bake for 10 minutes or until done.
Syrup For the syrup combine the water and sugar together ina pot and bring to a boil. Simmer 5 minutes. Cool for 5 minutes and add the Grand Marnier.
Mousse For the mousse combine the cream and chocolate and microwave until chocolate has melted. Chill untill firm and whip with a mixer at high speed, adding the butter gradually.
Turn the cake out on a towel dusted with icing sugar while still hot. Peel off the paper and roll it from the long side. Let it rest for 1 minute, unroll and let cool. Brush the cake with the syrup and spread with the chocolate mousse. Brush with the warmed apricot jam.
Glaze Melt the chocoate and butter , let cool and pour over the cake.Swirl with a fork into log patterns. Chill. Decorate with meringue mushrooms. |
