4 eggs
4 tbsp. flour
2 tbsp. grated cheese
Salt and pepper to taste
Fresh parsley (may use dried)
1/2 tsp baking powder
1 1/2 tbsp. oil

Directions:
Directions:
Preheat oven to 400º.
Grease an 8 or 9" square pan

Beat all ingredients with a fork or wire whisk. Pour into pan and bake until golden brown. Approximately 15-20 minutes. Turn oven off. Cut into small squares and return to oven to let them dry out a little. Refrigerate if not using them right away.

Nonna Volpe was a wonderful cook. Most of her recipes came from her own ingenuity, not from a cookbook. She used to say to just add "a handful of this or a pinch of that"!
