3 c. Chopped potatoes
2 c. Water
3/4 c. Celery, sliced
3/4 c. Carrots, sliced
1/2 c. Red onion
1 T. Parsley flakes
2 chicken bouillon cubes
1/2 tsp. salt
1/2 tsp. pepper (optional)
3/4 pound velveeta cheese

Directions:
Directions:
Simmer all vegetables for 30 minutes. Mix water and bouillon and add. Mix 3 c. Milk and 3 T. Flour and stir until thick. Add 3/4 pound velveeta cheese, melt and heat through.
