Strawberry Syrup:
3 c. sliced strawberries
1 c. sugar
Zest and juice of 1 lemon

French Toast:
2 eggs
1/2 c. milk
1/2 tsp. sugar
8 oz. cream cheese softened
1 c. sliced strawberries
12 slices white bread

Strawberry Syrup:
In a medium saucepan, combine all three ingredients and bring to a boil. Lower the heat and simmer until strawberries are soft and the syrup thickens and reduces by 1/3-1/2 the volume. Set aside to cool to room temperature.


French Toast:
In a bowl whisk together the eggs, milk and sugar. Spread cream cheese on half of the bread slices and top with sliced strawberries. Top all six slices with remaining bread slices and press around edges to seal.

Melt butter on a griddle over medium-low heat. Dip sandwiches in the egg mixture for a few seconds per side. Cook the sandwiches for 2-3 minutes per side or until golden brown.

Top with maple syrup, strawberry syrup or confectioners sugar and serve.
