2-3 c. Broccoli florets
3 1/2 c. Water brought to a boil
1/4 c. Butter
1/4 c. Chopped onion
2/3 c. Flour
5 c. Milk heated
1 can (10 1/2 oz.) chicken broth
1 1/2 c. Cheddar cheese
Salt and pepper

Directions:
Directions:
Cook broccoli in boiling water, uncovered, until crisp tender. Drain, but reserve cooking water. In saucepan melt butter and add onion and cook until tender. Stir in flour. Cook until bubbly. Stir in half the milk, the cooking water and the chicken broth. Cook and stir until thickened. Strain the soup to remove the onion. Return the remaining "soup" to the pot and add reaming milk and chopped broccoli. Heat through and season with salt and pepper. Add cheese, stir until melted and serve.
