1 box devil's food cake
eggs and water/oil as directed on cake box
1 bag of bulk mint chocolate squares, chopped

Mint Buttercream Icing:
8 c confectioners' sugar
1 c butter, softened
¼ tsp salt
2 tsp mint extract
8 tbsp milk
green food coloring

Directions:
Directions:
Combine ingredients of devil's food cake as directed on box then mix in chopped mint chocolate square pieces. Pour into cupcake liners until ¾ full. Bake as directed for cupcakes.

Icing:
In a large bowl, cream 2 ⅔ c sugar with butter and salt. Blend extract, 4 tbsp milk, and remaining sugar into mixture. Gradually stir remaining milk into frosting until desired spreading consistency is reached (note: not all milk may be needed – icing may separate if too much milk is added). Add food coloring. Ice cupcakes once cool.
