3 c. pinto or red beans- washed
3 qt. Water (if water cooks out add more)
1 lb. Ground beef
1 onion
2 tsp. salt to taste
2 tsp. chili powder
2 c. tomato juice

Directions:
Directions:
Bring beans and water to boil, then turn down to simmer and cook about 4 hours-until tender. Cook ground beef and onion, add to beans. Then add remaining ingredients to beans. Bring to boil again-turn down to simmer and cook about 30 minutes.

*I use Rhoades frozen rolls for scones. Let thaw according to package directions stretch and flatten then fry in hot oil and drain on paper towel. I can only fry 3 scones at a time so I keep the them warm in the oven so we can eat together as a family

Top scone with chili, cheese, lettuce, tomato, salsa, sour cream, ranch etc.

For a nice end to the meal- serve left over scones with honey butter
Honey Butter
Mix ½ cup butter, ½ cup honey and a little vanilla together.

This is a favorite winter meal. I make a huge batch and freeze in smaller portions.
