Blueberry Brunch Recipe

12 slices home style white bread or Hawaiian Bread rolls (about 16)
12 oz. cold low fat cream cheese
1 ½ cup fresh blueberries
12 large eggs
¼ cup maple syrup
2 cups 1% milk (I used 2%)

Blueberry sauce
1 cup sugar
2 T. cornstarch
1 cup water
1 cup fresh blueberries
1T. margarine or light butter

Directions:
Directions:
Cut or tear bread into 1 inch cubes. Cut cream cheese into small cubes. Arrange ½ of bread in buttered 13x9 inch pan. Put cream cheese and blueberries on top. Arrange remaining bread on top. Whisk together eggs, syrup and milk. Pour over brad making sure all bread cubes are moistened (press down). Cover and chill overnight. Bake uncovered with foil 30 minutes at 350 degrees. Remove foil and continue baking for 30 minutes.

Serve with Blueberry Sauce
Combine sugar, cornstarch and water in a saucepan. Cook over medium heat, stirring constantly, until thickened. Stir in blueberries and simmer for about 10 minutes, stirring constantly. Add butter or margarine and stir until well blended.
