1/2 cup shortening (Crisco or other)
1 cup sugar
2 beaten eggs
1 lemon rind
1 1/2 cups flour
1 1/2 tsp. baking powder
1/2 cup milk
1/2 cup chopped nuts (optional)

Topping: 1/2 cup sugar and juice of one lemon

Directions:
Directions:
Cream shortening and sugar together. Add eggs and beat well.
Add baking powder, then alternate flour and milk. Add lemon rind and nuts (if using).

Grease loaf pan.
Bake at 350º for approximately 1 hour.
While loaf is still hot in pan, pour lemon juice/sugar mixture on top.
Let cool and remove from pan.

This recipe was one of Auntie Ginny's favorites. No matter how hard I tried I could never get mine to come out as good as hers!
