2 apples, peeled, cored and sliced really thin
1 lemon, sliced very thin (remove the seeds after slicing)
1/4 tsp baking soda
additional lemon juice if you want, or lemon zest
3 eggs
1 cup sugar
1 cup all purpose flour

Directions:
Place apples (I use my Apple/Peeler/Corer from Pampered Chef) into deep 10 inch pie plate or into small bake ware pans for individual servings take out the seeds. Place lemon into a bowl (or 4 cup mixing cup). Sprinkle with 1/4 tsp baking soda (will fizz and bubble), layer the slices over the tops of the apples (as you wish). Add additional lemon juice if you want, or lemon zest (if you have access to Meyer Lemons, this is wonderful with them). Using the same bowl from the sliced lemons; beat 3 eggs with 1 cup sugar. Gradually add 1 cup all purpose flour, beat until smooth. Pour slowly over the apples and lemons until completely covered.

Bake at 375 degrees. Start checking for doneness after 30 minutes. Will be brown on the top. Remove from the oven and cool slightly before serving. You can serve warm. and it really is wonderful with some fresh blueberries or raspberries to go on top! Enjoy
