Fresh Carrots (go to the Farmers Market or your local produce farm)
Water

Warning: 25# of Carrots is a lot! Don't buy this much unless you want tons! I made this mistake once!

Wash and peel the carrots. Rinse again. Slice the carrots however you desire (coins, sticks, halved and cut in half, etc.).
Fill a large kettle with water and add some sugar (1/4-1/2 C. depending on the size of the kettle ).
While the water is heating, fill the sink or a cooler with cold water and ice cubes.
You will be "blanching" the carrots by placing them first in the boiling water and then into the ice water.
Add carrots to the boiling water. I have a large canner and I can put in 3 lbs at a time. Cook for 3 minutes. Use a timer. Carefully remove with a large slotted spoon and place into ice bath for 4 minutes.
Remove from the ice bath and place on a counter covered with bath towels (to absorb the water).
Once all of the carrots have been processed, pack them into freezer bags, based on how you cut them; and in the portion size you desire. For two people I pack 1 C. into each bag.
I stack the bags in a baking pan and place it in the freezer. Once the carrots are frozen, I remove the bags from the baking sheet and stack them in a freezer basket.

Grab your significant other or a friend to do this with; it makes it go much faster. One does the cutting/slicing of the carrots while the other does the blanching of the carrots. These carrots are so much fresher tasting than the ones you buy in the store.
