Ingredients: Choose tender, sweet corn on the cob (whatever amount you want) Water Sugar Ice

Directions:Remove husk and silks from corn. Rinse corn well. Fill a large kettle with water and add sugar (1/4-1/2 C. depending on size of kettle). Make sure you leave space in the pan for the corn, so the water doesn't run over when you add the corn. While the water is heating fill the sink or a cooler with cold water and ice cubes. You will be "blanching" the corn by placing it first in the boiling water and then into the ice water. Add corn cobs to the boiling water. I have a large canner and I can put in 6 ears at a time. Cook for 3 minutes. Use a timer. Carefully remove with tongs and put into ice bath for 4 minutes. Remove from the ice bath and place on a counter covered with bath towels (to absorb the water). Cut the kernels off the cob into a bowl, or on a cutting board. They sell handy cutters you spiral around the cob and it cuts the kernels off quickly. Once all of the corn has been processed and cut from the cob, pack the corn into freezer bags in the portion size you desire. For two people I pack 1 C. into each bag. I stack the bags in a baking pan and place it in the freezer. Once the corn is frozen, I remove the bags from the baking sheet and stack them in a freezer basket. |

Notes: Grab your significant other or a friend to do this with, it makes it go much faster. One does the blanching of the corn while the other cuts the kernels off the corn. This corn tastes like you just cut it off the cob, it is so much fresher tasting than the corn you buy in the store.
