2 -3 lb. fresh bone-in Turkey Breast halves
8 Tbsp. Butter, at room temperature
Kosher Salt and freshly cracked Black Pepper
1 Onion, peeled and sliced (or 2 Shallots)
2 C. low-sodium Turkey Stock (or Chicken)

Gravy:
2 Tbsp. Butter, at room temperature
2 Tbsp. Flour
1/4-1/3 C. Milk
Kosher Salt and freshly cracked Black Pepper

Preheat the oven to 375ºF.
Turkey:
Rinse the turkey breasts and pat dry with paper towel. Place in a roasting pan on a wire rack, breast side up. Rub 4 Tbsp. of butter all over the surface of each breast and season them well with salt and pepper. Add the onions to the bottom of the pan and cover with the stock..
Roast in the oven about 1 hour, until the juices run clear and an instant-read thermometer registers 165ºF. Begin checking the internal temperature after 45 minutes to prevent overcooking. Remove the turkey breasts from the oven to a cutting board and tent with foil. Allow turkey to rest while making the gravy,
Gravy:
Carefully drain the drippings from the roasting pan into a small pan over low heat and bring to a simmer. In a small bowl mash together the butter and flour with a fork, until a paste forms. Whisk flour mixture into the simmering stock. Gradually add 1/4 C. milk and continue to whisk, season with salt and pepper to taste. Continue to cook until thickened. Add additional milk one Tbsp. at a time if gravy becomes too thick.
Carve the turkey breast meat from the bone and arrange slices on a serving platter. Serve with gravy on the side.
