2 lb. ground beef or chuck, crumbled
2 T. salad oil
2 med. sized onions, finely chopped
2 cloves garlic, minced
1/2 lb. mushrooms, sliced (optional)
1/4 t. each: nutmeg, pepper, oregano, salt
1 pkg. 10 oz. frozen chopped spinach thawed and well drained; or 1 lb. fresh spinach, washed, drained and chopped (about 4 cups)
4-6 eggs

*We prefer to use fresh spinach for this recipe.

Brown ground beef well in oil, over high heat, in a large frying pan. Add onions, garlic and mushrooms (if used). reduce heat and continue cooking, stirring occasionally until onion is soft. Stir in seasonings and spinach; cook for about 5 mins. longer.
Add whipped eggs, cook separately or in edge of pan over low heat until eggs begin to set, then stir into mixture.
