Dry Rub:
2 tsp. Salt
2 tsp. Chili Powder
1 tsp. Sugar
1 tsp. ground Cinnamon
1/2 tsp. Black Pepper

Cornish Hens:
3 large Carrots, roughly chopped
3 stalks Celery, roughly chopped
3 Onions, roughly chopped
2 Oranges, cut into wedges
6 Cornish Game Hens, cleaned, rinsed and dried with paper towel
Olive Oil, to drizzle

Dry Rub:
Place all ingredients in a bowl and mix to combine.

Cornish Hens:
Preheat oven to 450ºF. Line baking pan with foil.
Spread the vegetables and orange wedges evenly in the roasting pan.
Drizzle Olive Oil over the vegetables. Rub Olive Oil over the hens and sprinkle with the Dry Rub mixture, remember to season the cavities too. Place some of the vegetables and an orange wedge in the cavity of each hen.
Place the hens on a rack (over the vegetables), being careful not to crowd the hens. Place in the oven and roast for 45 minutes, or until the juices run clear and they are browned. Let the hens rest for 10 minutes before carving or serving.
